Tex-Mex Inspired Bean Salad with Tempeh Croutons

At the heart of this salad is tempeh, a traditional Indonesian soy product that offers a unique twist. Unlike tofu, tempeh is a whole form of soy, where soybeans are pressed together with a network of mushroom fibres and fermented—a wonderful option for enhancing gut health. Move over kefir, tempeh is the new star in fermented foods!

The recipe is actually for 3-4 servings as a main meal or can be taken as a starter for a gathering. Please only add fajita or taco seasoning to taste first, especially if you have health issues which mean you need to watch your sodium intake and be aware to find a seasoning mix with less sodium. I can link some other brands in the UK that can be used instead of the mix featured.


Ingredients

1 red onion finely diced

1/2 medium cucumber diced

16 cherry tomatoes quartered

Tinned mixed bean salad in water 400g (I got this from Morrisons)- drained and rinsed - 280 grams drained

Jalepenos to taste

Chipotle chilli sauce or tabasco to taste- I put 3 tablespoons

6 jarred sweet piquante peppers (optional)

½ red or yellow pepper deseeded and finely diced

65 grams of Tinned pineapple drained and rinsed and cut into 1cm chunks

2 garlic cloves

15 grams coriander finely diced

1 avocado

Juice of a 1.5 limes or lemon

90 grams fajita seasoning mix (1.5 packets) or to taste

200 gram block of tempeh

2 tablespoons soya sauce (Optional)


Method

  1. Cut the tempeh into 0.5cm cubes and marinade in the soya sauce and half a packet of taco seasoning mix (or to taste) and leave for 10 minutes.

  2. Crush the garlic cloves and heat in a microwave-safe dish in the microwave for 2 seconds with a splash of water and allow to cool.

  3. Mix all the other ingredients for the salad apart from the avocado, garlic lime juice and rest of the taco seasoning mix and chilli sauce.

  4. Arrange the tempeh on a parchment-lined baking tray and cook in a preheated oven at 200C for 12 minutes, turning halfway.

  5. Transfer the tempeh croutons to a bowl.

  6. Dice the avocado and add to the salad bowl.

  7. Combine the cooled beans and garlic with the rest of the salad and pour over the lime/lemon juice, taco seasoning mix and chilli sauce to taste and mix thoroughly.


Serve as suggested above!


Nutritional info: Per serving if serving 3 people: 520 calories, 10.2 grams of fat- 1.7 grams being saturated fat, 65.8 grams of carbohydrate and 25 grams of protein.
