This salad goes so well with so many different cuisines as it is light and refreshing.
I pack a variety of coloured fruit and veg for their different phytonutrients. The salad is dressed with sumac, a dried berry used in Middle Eastern cooking which has a citrusy flavour and is packed with antioxidants.
Pomegranate molasses is finally added to add sweetness - I prefer Odysea brand from Sainsbury’s as there aren’t any unhealthy additives.
It’s pretty simple to batch prepare ahead and you don’t have to go by my ingredients or quantities. You can use ready-boxed salads to save time and dress them this way. Just add the dressing when about to serve to stop the salad from getting soggy. It’s simple but very moreish!
Ingredients
170g radish
1 little gem lettuce
200g cherry tomatoes
1/2 cucumber
75g black olives
8 gherkins
1 red pepper
1 onion
1 small bunch of parsley
1/4 cup pomegranate molasses
1 tsp salt (omit if sat free)
2 tsps sumac
1 apple cored
Method
Finely chop all the fruit, veg and herbs and add to a large mixing bowl
Add the salt, sumac and pomegranate molasses and thoroughly mix.
